I've been wanting to do this for a while but have been putting it off. Aside from books I love cooking it's a great outlet for me. Instagram has been a fun outlet to share my book pictures but I've been adding more and more food pictures. I thought I could use my blog to share a new recipe each week which will also cause me to try new things. So we will give it a go and see how it goes. I hope it's as interesting to me as it is to you. I follow a lot of food bloggers so I have whole list of fun ones I want to try. 

This week I made Green Chili Chicken Enchilada Casserole but I added a few of my own twists.

First 

I used my crock pot to cook chicken thighs with onion and red peppers.
I also used flour tortillas and placed a little bit of cream cheese on the tortilla before placing the chicken onion pepper mix and cheese. 

Next 
I placed a little of the green chili sauce in the bottom and layered the enchiladas on top covering them with green chili and cheese. 
Baked for 20 minutes at 350

Last 
Serve with some sour cream. 

Overall thoughts
I've had them before but never have I made them before. A quick search on google gave me an idea and with a little tweak I was able to make exactly what I was hoping to get. My husband and the kids love it so I will be adding it to future meals.
