Happy Easter if you celebrate and Happy Sunday if you don't! I hope everyone has a lovely day today. Today I'm baking a ham, making roasted potatoes and air frying asparagus. Super easy dinner but very tasty. Planning to spend the day hanging out as the munchkin took off to spend the night with her friends last night.

I've been really active on instagram but starting to transition back into blogging. Working on a new routine. 
Today I'm sharing on instagram on kindle freebie at time of posting with a stunning cover. It's been lost on my TBR list for far to long. I blame the one click addiction that I have. 


New books

I've added way to many over the last many months to count. A lot of these are newer books that I've been picking up. The kindle one click is just scary. 

Foodie
I've become obsessed with noodles and my air fryer. I love making sweet and savory fritters. I've been playing with different ramen noodle dishes for dinner. This week I'm going to make some miso chili ones. I also purchased the waffle bowl maker it's become fun seeing what I can stick in it next. This is my chili cornbread bowl. 

Binge Watching 
Currently watching Sailor Moon from the start.

Gosh it's been ages since I've done a Sunday post. I won't try to overwhelm you with all the details just some fun updates.

I've been doing a lot of baking, so many unique cookie creations, and I've decided to start putting them down here. So weekly I hope to share a new recipe that I've created. I've also been doing a lot of burrito unconventional creations. Like my breakfast ramen burrito is very tasty and quickly became one of our favorites in my house. 

I've been reading a lot more recently. My bestie and I are currently reading the Blood and Ash series by Jennifer L. Armentrout. Which we are both loving and it's been a fun adventure. We are reading 2 chapters a day so we can both read other books or other things. We are also reading together the Bridgerton series right before they air on Netflix and we watch them together. We didn't love the second season I'm afraid that we loved the book so much more and missed out a lot of the cute parts from the book. 

I've been super crafty recently. I've gotten back into cross stitching recently and I'm working on a beautiful Sailor Moon project for my daughter. I have a few more projects after I finish this one that I can't wait to dive into. I've been doing some crochet projects that I attempting to finish. A little sewing and jewelry also. I've even been making floss bookmarks to match the books I'm reading for fun. I'll be sure to start sharing them in the future. 

Read the last week 
I didn't finish anything last week yet. I'm half way though a bunch of books though. Since I'm doing the whole buddy reading I've started reading multiple books at once. Hopefully I should finish a few this week. I also have DNF a bunch the last few months that I struggled to get into but I'm not the type to typically DNF so I may just have not been in the mood for them.

I shared a teaser of one of my current reads Binding Rose by Ivy Fox (here) This is a book I picked based on the cover it's a Mafia arranged marriage that's connected to a whole series with multiple authors it's all intertwined. I love the concept and have been enjoying it. 

I shared my Waiting on Wednesday this week also (here) Another one that captured me by the cover alone. I love the concept it's one I'm eager to read. 

Plus a whole bunch of release post and cover reveals. I have so many reviews to write I've been such a slacker lately. Eek 

New books 
I've purchased a ton of books but didn't take pictures yet but I should have them for next week. 

Foodie
I've been trying all kinds of new things recently. These are my first attempt at homemade pop tarts. They aren't pretty but they are super tasty.

Binge Watching 
I've started binge watching Grimm again from the beginning it's been a few years but it's still one of my favorite shows. I wish it had gone on longer but I'm glad I got as much as we did. I think it's the fairy tale concept that I love it's like adult fairy tales with a dark real twist. 

Quote for the week
Love this!!! It's kinda perfect with the latest installment of Jurassic World coming to box offices soon.

This week the weather has been all over the place, it just can't seem to figure out what it wants to do. We had days almost 80's bright sunny beautiful and days of cold rain. Of course the days I want to run out its  raining seems to be my luck. The munchkin had school this week so our mornings are filled with online school. 

For the most part it's been a quiet week with school, work, reading, binge watching and just hanging out around the house. Here in California they have started to open up the bay area but our numbers are to high still so we are in lockdown. I feel like we are always in lockdown, and it blows my mind how many places are still open and people are about when we are not supposed to be leaving but for essential stuff. Hopefully, things will start getting better.

Challenge Update 
I'm currently 5 of 250 almost done with my 6th. 

Baking

Yesterday was National Pie day so of course I had to make a pie. Opted for a easy but very tasty Banoffee Pie. This one has a cookie crust with bananas, dulce de leche, homemade whip cream and shaved chocolate. So yummy it's one of my favorites thanks to my good friend Victoria it's an English Dessert. 


Binge Watching 
This week I'm watching Mrs. Browns Boys on Brit Box on amazon. It's been recommended to me a bunch of times by my dad to check it out. Izzy doesn't get the comedy so I've been watching it on my own. 
Winx Saga is on my list for the week I hope to binge it today as I remember watching the cartoon with the munchkin.

The weather has been all over some days it's nice and chilly outside and others it's warm enough that I need the AC on. Oh California you as always are so weird when it comes to weather. It was a busy week but very productive. 

 The covid-19 adventure has continued it never seems to be ending at this rate it's been almost a year since we first went into quarantine. It's been filled with lots of ups and downs. We went into home school world that has been rough but we keep at it one day at a time. My munchkin has been having a rough time she's gone from the social butterfly to home with just mom. 

I've been in a blogging, reading, and just blah funk. It's exhausting dealing with her school, keeping her entertained and working on my own stuff. I think I read 20 books last year and blogging became a chore squeezing it in when I could. I missed a part of myself, and plan to work hard on finding my love for books, blogging, crafty, baking and just the stuff I love.

New books

While I may not have been reading a lot over the last year I have still be buying lots of books. Filling up my shelves, and loading the my kindle. I haven't taken any pictures but decided I would make a collage of the recent purchases. Lots of lovely covers and I've already started on reading them, 

Challenge Update 
I'm currently 3 of 250 almost done with my 4th and will be today. 
I haven't finished any books for my challenge as I'm a mood reader but maybe later. 

Baking
I've baked bread a bunch, I made my first cheesecake this week in ages. I have another one to make this weekend for my friends husbands birthday! This was my trial run. I know it's not the prettiest cheesecake but really I just wanted to try the brownie bottom and decided that the dark chocolate ganache isn't kid friendly enough for what I need. The cake itself was amazing and the brownie bottom was moist. 

Binge Watching 
I've been watching a lot of TV lately with so many amazing shows on.
 I watched Bridgerton and loved it quickly picked up the book to read with my bestie. We are making our way though at her pace due to she's in school and has home schooling like me. 
Finished the Chilling Adventures of Sabrina so sad to see it end, as it's one of my favorite shows. I was disappointed by the ending. Maybe another network will pick it up. Fingers crossed. 

Of course I'm on the Cobra Kai trend it's awesome and season three is so far the best with bringing in some old characters from the movies which I loved.

The Mandalorian is one of my favorites this season made me cry but I have hope for the future. I wasn't ready for it to end and now the wait for the next season.

Another week in quarantine as cases in California start to rise again to the point we spiked 10,000 positive cases on Tuesday. The highest single day on record for positive tests so far. Honestly, as masks are required for going out I wasn't expecting to see the spikes so much over the last week. I hope we can get it under control because things across the country aren't looking much better. 

A new scandal is breaking with several big online retailers this week Overstock, Wayfair, Amazon and a few other big names came under fire for human trafficking via selling items for crazy amounts of money with names for people missing. Nothing has been proven yet but it's one of the big conspiracy theories that's floating during the last few days. 

The weather has been hot to the point I didn't want to cook because it would heat up the house to much. I'm making a turkey breast today and sandwiches with salad for dinner because we are looking forward to another triple digit day.

It's been really warm summer so not a lot of baking has been going on but I did make a batch of ham and cheddar scones. They are kind of flat but I'm going to try again and see if I can make them puff up.
