Foodie Friday!!

Foodie Friday

I've been wanting to do this for a while but have been putting it off. Aside from books I love cooking it's a great outlet for me. Instagram has been a fun outlet to share my book pictures but I've been adding more and more food pictures. I thought I could use my blog to share a new recipe each week which will also cause me to try new things. So we will give it a go and see how it goes. I hope it's as interesting to me as it is to you. I follow a lot of food bloggers so I have the whole list of fun ones I want to try.

Recipe
I've found the most amazing brownie recipe. I've always been a brownie fan but never found the perfect box mix. I found the most amazing recipe that makes perfect brownies every time.

I had to tweak the recipe to get it just right but it turns out amazing every time.

Find the original recipe (here) They originally are a Raspberry Cheesecake Brownie

Steps
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup brown sugar, lightly packed
4 large eggs
2 teaspoon vanilla
2 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon salt

Preheat the oven to 350 degrees F. Line an 9 by 13 inch baking pan with parchment paper and set aside.
In the bowl of a stand mixer, or with an electric mixer, cream together the butter, sugar and brown sugar until light and fluffy. Add the eggs and vanilla and whip again until well combined. Add the flour, cocoa powder and salt and mix until well combined. Spread the brownie batter in the prepared pan, smoothing it out into an even layer.
Bake 30 minutes

They come out perfect every time.

Overall Thoughts

They are an amazing vessel for a wide variety of flavors.

My favorite combo is Dark chocolate cocoa powder and a bag of mini dark chocolate chips. No toppings needed.

I've done a cream cheese topping with peanut butter cups.
A vanilla Butter Cream frosting
As well as topped with peanut butter cups right out of the oven.

Hands down the best brownies I've ever made and I will never use a box recipe again.

I am always looking for new recipes to try so if you have a suggestion I'd love to check it out.
