Foodie Friday #2

Foodie Friday #2

I've been wanting to do this for a while but have been putting it off. Aside from books I love cooking it's a great outlet for me. Instagram has been a fun outlet to share my book pictures but I've been adding more and more food pictures. I thought I could use my blog to share a new recipe each week which will also cause me to try new things. So we will give it a go and see how it goes. I hope it's as interesting to me as it is to you. I follow a lot of food bloggers so I have whole list of fun ones I want to try.

Banana Bread with a twist.
This weeks recipe is all my own. It's my basic muffin recipe that I use as a based for all kinds of bread and muffins.

Recipe

Mix the wet and mix ingredients separately

Dry
2 cups of flour
1/2 cup of sugar
1 tablespoon baking powder
1/2 teaspoon of salt

Wet
2 eggs
3/4 cup of milk
1/3 cup of oil

Add the wet to the dry mix well.
At this point you can add anything you want to mix in.

These mini loaves are banana with chocolate chips

Added 4 mushed banana
1 1/2 cups of chocolate chips
nutmeg and cinnamon a sprinkle each.

grease loaf pans or into muffin cups

Preheat oven to 400

Muffins bake about 18 to 20 minutes
Large loaves 45 to 50 minutes
Mini loaves about 25 minutes roughly

Overall thoughts
This is one of my favorite recipes it's easy but it's perfect for early morning muffins add a little jelly or dried fruit. I've added cheese and bacon for breakfast ones. I've even made dinner ones with lots of sausage peppers onions cheese. The great thing about these is they are a perfect little platform and just needs some creative inspiration.

I am always looking for new recipes to try so if you have a suggestion I'd love to check it out.
